RECIPE: Easy Air Fried Zucchini Chips
So many of our clients are craving football snacks! Munching in front of the TV doesn't need to involve mindless amounts of processed food or platters of wings. When you're craving a crispy, salty treat try these quick and easy air fried zucchini chips!
Why do we love zucchini? This form of squash is actually a fruit, but often treated as a vegetable. Zucchini is full of water and fiber, two compounds which are filling and contribute to healthy digestion and a balanced gut biome. It also contains potassium and carotenoids which help lower blood pressure, cholesterol, and may reduce your risk of heart disease. Plus zucchini is high in folate, potassium and Vitamin A! It's delicious in summer, but typically available year round, so it's the perfect side dish or snack.
Easy Air Fried Zucchini Chips
1 beaten egg
1/2 c almond flour (blanched and finely milled)
1/2 tsp garlic powder
1/8 tsp cayenne pepper
salt and pepper to taste
Wash, dry and thinly slice zucchini into 1/8 in slices
Beat egg in a small bowl. Mix almond flour and spices in a separate bowl.
Dip zucchini in egg wash, then coat in seasoned almond flour mixture.
Spray air fryer with avocado oil and add coated chips to the basket, being careful not to overlap slices.
Air fry for 10 min at 400 degrees
Serve with dairy free tzatziki or Noble Made buffalo sauce by The New Primal.
