RECIPE: Maple Cocoa Gluten Free Pumpkin Seed Bars
These bars were a delicious happy accident! I saw my husband grab one of the processed granola bars I had put out for delivery workers and I wanted to step in and make a healthier alternative. These bars are a gluten free, grain free, fiber rich bar that you can literally whip up in under 15 minutes.
Gluten-Free Maple Cocoa Pumpkin Seed Bars
1 1/2 cups organic coconut flakes- not shreds (if they're large, coarsely chop them)
3/4 cup organic raw pumpkin seeds
1/4 cup Whole Foods 365 cocoa flax and chia ground seed blend
1/4 cup Choc Zero pecan maple syrup
Optional Mix Ins: additional chia seeds, choc zero chocolate chips, cacao nibs, sunflower seeds, slivered almonds
Prep a baking sheet with parchment paper
Preheat oven to 350 degrees
Mix all ingredients except maple syrup in a bowl until blended.
Add maple syrup slowly and stop when mixture is evenly covered but not overly saturated.
Spread on parchment prepped baking sheet
Bake 10-12 minutes
Allow to cool completely and then cut into bars.
Store in air tight container at room temperature.
