RECIPE: Cucumber, Tomato and Mint Salad
Cucumber, Tomato, Mint and Feta Salad
1 pint grape tomatoes, washed and halved
1 large English cucumber, peeled and cut into half- moons
1/2 red onion, thinly sliced
1/2 c apple cider vinegar
stevia drops to taste
1/3 c fresh mint, chopped
1 tsp salt and freshly ground black pepper to taste
Violife vegan feta (if desired)
In a medium mixing bowl, combine the tomatoes, onion and cucumbers.
In a small bowl, combine vinegar, stevia, salt and pepper.
Pour vinegar mixture over cucumber, onion and tomatoes. Toss to coat.
Refrigerate for several hours until chilled. Serve over arugula with crumbled vegan feta (optional)
