RECIPE: Garlic Ginger Chicken
Paleo Garlic Ginger Chicken
This easy weeknight meal can be thrown together in 30 minutes. Serve over some cauliflower rice with veggies and you have a balanced and filling dinner!
1 lb organic boneless, skinless chicken breast, diced into bite size pieces
2 diced scallions
2 cloves garlic, minced
1/2 in fresh ginger, grated
1/3 cup coconut aminos
1 tsp white vinegar
1 Tbsp sesame oil (for sautéing)
pinch red pepper flakes
2 Tbsp choc zero maple syrup
Head sesame oil over medium-high heat in a deep sauté pan. Add chicken and cook through- 3-5 min
Mix remaining ingredients, except for scallion, and add to chicken. Reduce heat and simmer for 10-12 min until slightly thickened and reduced.
Spoon over hot cauliflower rice and top with scallions and sesame seeds (optional)
