RECIPE: The Ultimate Summer Kale Salad with Grapefruit, Avocado and Pistachio
For some reason I have been craving grapefruit all the time lately! The slightly tart, slightly sweet fruit tastes like pure summer, especially when combined with creamy fresh avocado and toasted pistachio. Plus it's water-rich and loaded with Vitamins C and A.
This salad was quick, refreshing and SO satisfying, especially when topped with a protein like grilled shrimp, chicken or some hard boiled egg. The dressing will keep for several weeks in the fridge, and has all the fresh citrus flavor of grapefruit and lime, but softened with a touch of maple syrup and good olive oil. The citrus in the dressing also keeps your avocado from browning if you are serving this salad to a crowd! It's the perfect summer salad!
Kale, Grapefruit and Avocado Salad with Grapefruit Lime Vinaigrette
1 bag washed, shredded kale with ribs removed
2 ripe avocados, peeled, pitted and sliced
2 large pink grapefruits, peeled, seeded and sliced
1/2 c toasted pistachios
protein of choice (hard boiled eggs, grilled chicken etc
1/4 c fresh squeezed grapefruit juice
1/4 c extra virgin Olive Oil
Juice from 1 lime
1 tsp salt
pepper to taste
1 tsp Choc Zero maple syrup (or honey if not watching sugar)
Add all dressing ingredients to a mason jar and shake vigorously, set aside
Place kale, avocado and grapefruit in a bowl and toss to combine. Top with pistachios and drizzle with dressing.
