RECIPE: To Die For Paleo Chocolate Maple Granola
Admittedly neither of us are big fans of granola. Not because there aren't amazing clean healthy options these days- there are- but because it goes down way too easily! An appropriate serving of granola is 1/4 cup. The more common serving of granola is half a bag while standing in the pantry.
But for those of you who have better self control, or who want a gluten free, grain free, dairy free, low sugar option for your kids, we have the perfect recipe! This one is loaded with healthy plant-based protein and fiber from nuts, chia, flax and coconut.
Proceed with caution- this is so good it's almost unsafe to have in the house!
To Die For Maple Gluten-Free Chocolate Granola
1 egg white +2 tablespoons water combined and lightly beaten
2 cups raw walnut pieces
2 cups raw cashew halves
1 cup raw pepitas
1/2 cup raw pecans
1/2 cup Whole Foods 365 cocoa coconut chia & flax blend
1 cup unsweetened coconut, shredded
3 tablespoons melted coconut oil
1/3 cup choc zero maple syrup
2 teaspoons vanilla extract
1 teaspoon cinnamon
½ teaspoon kosher salt
Preheat the oven to 300 degrees F.
Line a baking sheet with parchment paper.
Add all ingredients to a food processor and pulse until chopped and combined.
Spread the mixture evenly on the baking sheet.
Bake for 20 to 30 minutes or until golden-brown and crispy.
Remove from oven and allow to cool 20 minutes before breaking apart into clusters with a wooden spoon.
Once cool, store the granola in a resealable glass jar.
Serve with your favorite non dairy milk and berries!
