Meatless Monday: Eggplant Agrodolce
Easy, light and springy this vegetarian dish is a crowdpleaser, even for those who aren't huge eggplant fans!
1 small eggplant, washed and sliced in ¼ in slices
5 tbsp EVOO, divided
½ tsp salt
½ c red wine vinegar
½ tsp red pepper flakes
3 tbsp ChocZero sugar free honey
toasted pine nuts (in EVOLVE, ADAPT and LIVE) and shredded fresh mint to top
Preheat grill to medium high. Brush eggplant slices with 2 tbsp EVOO and sprinkle with salt
Grill eggplant for 3-4 min each side until golden brown. Remove and set aside.
In a small pot heat 3 tbsp EVOO, ½ c red wine vinegar, 3 tbsp honey and ½ tsp salt, ½ tsp red pepper flakes. Bring to a boil then reduce and allow to simmer 12 min or until reduced to a ½ c
Pour vinaigrette over grilled eggplant and add mint and toasted pine nuts to top.
